4 Heston food experiments to try at home

Ever wanted to sit down with Heston Blumenthal and pick his brain? SBS treated two die-hard fans to a series of multi-sensory experiments with the culinary genius himself.

When it comes to edible experimentation, Heston Blumenthal is the master. Known for his curious creations at The Fat Duck, including ‘Snail Porridge’ and ‘Sounds of the Sea’ – which is served with an iPod to enhance the dining experience – he is fascinated by how our senses can affect the taste of food.

When our winners of the ‘Ultimate Heston Experience’ competition, Leia and Chris, met up with the chef, he stunned them by asking (and answering) the following questions:

• Does sound change the way food tastes?
• Does the absence of one sense heighten another?
• How does smell affect flavour?

Watch as Leia and Chris discover that taste and flavour are not quite as they seem...
