Australia is fashionably late to KitKat’s Ruby Sublime party, but it's definitely a better-late-than-never situation.

KitKat unveiled its brand new, pretty-in-pink line of chocolate treats earlier this year, when the Ruby KitKat (the result of a collaboration with Japanese pastry chef Yasumasa Takagi) hit the brand’s Japanese, Korean and British boutiques. , with good reason. Until Swiss chocolatier Barry Callebaut used the ruby cocoa bean to create the “fourth” chocolate, the most exciting colour variety we had seen was white.
In an Australian first, following a strong response in Asia and the UK, and a move to make Sydneysiders writhe with envy, Nestle is bringing two KitKat Ruby varieties to its Melbourne Chocolatory. As of May 3, KitKat fans will be able to gorge on a Sublime Ruby and a Black Label Ruby.
Sublime Ruby is similar to a regular KitKat – a classic wafer finger covered with premium ruby chocolate. The Black Label Ruby is where things get serious: it’s an eight-ginger bar, smothered in ruby chocolate and topped with dried strawberries, raspberries and caramelised meringue.

“We are delighted to be launching ruby chocolate and believe Australians are going to love it,” say Connie Yuen, KitKat Chocolatory Head Chocolatier. “Our iconic batch-baked KitKat wafers form the perfect base to complement ruby’s naturally-occurring fruity notes.”

The Sublime Ruby will market for $5, while the Black Label Ruby is dearer, at $20.

Worth a trip to Melbourne? Quite possibly.
