Fattoush

To keep cut radish from discolouring soak it in cold water until you are ready to assemble the salad. Fattoush is a great way to use up stale bread – break it up into pieces and toast or fry it to add to the salad.

Kibbeh nayeh

For this raw meat dish, make sure the mince is very fresh with a bright pink colour, and contains little to no fat. To achieve the very fine mince the meat should be put through a mincer two or three times.
