Ingredients
- plain flour, for dusting
- 2 puff pastry sheets, thawed
- 1 egg
- 1 tsp water
- 1 cup apple butter
- ½ cup toasted pecans, chopped
- ¼ cup gorgonzola cheese, crumbled
Apple butter is a rich, caramelised sauce of apples. If you can't get apple butter, you could substitute it in this recipe with stewed apples for a lighter version.
Instructions
1. Preheat oven to 205ºC (400ºF).
2. Lightly flour a clean work surface and roll out puff pastry into a large rectangle.
3. Cut the pastry into large squares.
4. Crack an egg into a small bowl. Add water and whisk to combine.
5. Using a pastry brush, brush egg wash onto the L-corner of each square.
6. Spoon apple butter onto centre of square and spread.
7. Add some chopped pecans and some crumbled gorgonzola.
8. Fold unbrushed corner of pastry square over top of filling, pressing against corner with egg wash.
9. Crimp the edges of the pastry with a fork.
10. Brush pastry with egg wash. Pierce top of pastry a few times with a fork.
11. Bake in the oven 20 minutes, or until golden brown.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
