Ingredients
- 1 cup pecans
- ½ cup butter, melted
- 1 tbsp corn syrup
- ¼ cup (60 ml) Canadian maple syrup
- ¼ cup brown sugar
- 1 egg, lightly beaten
- ¼ tsp vanilla extract
- ½ tsp spiced rum
- 10 mini tart shells
- 1–2 tbsp icing sugar, to dust
Instructions
- Preheat oven to 180°C. Line a baking tray with baking paper.
- Roughly chop pecans and place in a bowl. Add butter, corn syrup, maple syrup, brown sugar, egg, vanilla extract and spiced rum. Gently stir until ingredients come together.
- Spoon mixture into tart shells and place on prepared tray.
- Bake for 10 minutes, or until golden. Cool slightly. Dust with icing sugar before serving.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
