Ingredients
- 600 g (4 cups) plain flour
- 60 g - 100 g white sugar, depending on taste
- 1 tsp salt
- 5 tsp instant yeast
- 625 ml (2 ½ cups) warm water
- 1 tbsp olive oil
- Vegetable oil for deep -frying, (or canola)
Standing time: 2 hr
Instructions
- Place the flour, sugar, salt and yeast in a large bowl and whisk to combine well. Gradually pour in the warm water and olive oil and stir to make a smooth, soft – medium batter. The batter shouldn’t be too runny. Cover the bowl with a kitchen cloth or plastic wrap pierced to make a few small holes. Stand at room temperature for 2 hours or until doubled in size. You can also fill your sink with warm water and let the bowl sit in the water for 1 hour, stirring the mixture halfway through.
- Fill a heavy – based saucepan halfway with the oil for deep frying and heat to 180˚C. When the oil is hot, use a spoon or ice cream scoop to drop rounds of batter into the oil, being careful not to overcrowd the pan. Cook until golden and cooked through, then remove with a slotted spoon and drain on paper towel. Serve warm as they are or with your favourite sauce.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
