Ingredients
- Handful of dried apple rings
- Handful of dried peaches
- 3-4 tbsp boiling water
- Pinch dried mint
- ¾ cup raw, unsalted macadamia nuts
- 1 tbsp coconut oil
- 2 tbsp honey
- ¼ cup desiccated coconut + about 1 cup, lightly toasted, for coating
Instructions
- Place the apples, peaches and mint into a bowl and pour over boiling water. Steep for a few minutes.
- In the bowl of a mini food processor add the macadamias, coconut oil, honey and a ¼ of cup of desiccated coconut. Blitz until a sticky crumb forms. Add the pineapple mix and the water and blend again until a rough, sticky paste forms.
- Take small portions of the mix and roll with your hands to form balls. Coat in the extra coconut and then chill until firm. They will keep in an airtight container in the fridge for several days.
