Ingredients
Olive oil for cooking
1 onion, diced
1 garlic clove, crushed
1 red chilli, seeded and diced
1 red capsicum, diced
1kg pumpkin, peeled and diced
Instructions
Preheat oven to 180C.
Heat an ovenproof dish over medium heat. Add oil, onion, garlic and chilli and cook for 3–4 minutes until fragrant, stirring often.
Add capsicum and pumpkin and cook for 10 minutes stirring often.
Bake in preheated oven for 30–40 minutes.
