Ingredients

  • 125 g unsalted butter, softened
  • 100 g (½ cup) brown sugar
  • 115 g (½ cup) caster sugar
  • 1 egg
  • 150 g (1 cup) plain flour
  • 40 g (½ cup) good quality cocoa powder
  • 1 tsp bicarbonate of soda
  • pinch of salt
  • 200 g (1 cup) smarties, plus extra to decorate
  • 90 g (½ cup) milk choc bits
  • 90 g (½ cup) peanut butter chips (see Note)
  • 5 jersey caramels, halved, and/or 10-20 whole boiled lollies, to decorate
  • 1 tbsp popping candy, to decorate (optional)
Chilling time 20 minutes

Instructions

Preheat oven to 180°C. Line four baking trays with baking paper.

Place butter and sugars into a large mixing bowl. Using an electric mixer, beat for about 5 minutes, until creamy. Add egg and beat until combined. Add sifted flour, cocoa, bicarbonate of soda and salt. Add smarties, choc bits and peanut butter chips, and mix into the cookie dough with your hands. Cover bowl with plastic wrap and refrigerate for 20 minutes or until firm.

Roll 2 heaped tablespoons of dough into balls and place onto lined baking trays, allowing room for spreading. Press extra smarties, halved caramels or boiled lollies into the top of each cookie. Sprinkle each with popping candy, if using, pressing it firmly into each cookie, otherwise popping candy will pop around in oven. Bake for 12-14 minutes or until cookies are just firm around edges, but still a little soft in centre. Remove from oven and allow on cool completely on trays.

Note

• Peanut butter chips look like choc bits and can be found in the baking section at selected supermarkets.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
