When we spotted Adam Liaw's eye-catching take on the egg sandwich, it got us thinking about just how good an egg sandwich - in all its many forms - can be.

More a technique than a recipe, this 'disco egg fry' as it's also known can be customised with herbs, spices or other ingredients.

Coronation egg sandwiches
Coronation chicken is an iconic British dish of shredded chicken mixed with mayonnaise and curry powder. This sandwich is filled with an egg version, bringing together the best of the curry and egg-sandwich worlds – boiled eggs are chopped with mango chutney, lime pickle, sultanas, spring onions and coriander. Add a whole boiled egg in there and you've got a show-stopper sandwich.
Another Adam Liaw creation, this one pairs homemade square sausage patties with silky pan-cooked eggs.
A left-field entry in-between-two-slices-of-bread stakes here, with drop biscuits (the Canadian kind of biscuit) rather than bread, and a baked egg and sausage filling. Not only a filling breakfast but one where you can make both parts days ahead of serving.

Poh's parmesan-crusted egg and bacon sandwich
When egg says hello to bacon, and then ups the ante again... "If you love your bacon and egg sandwiches, you’ll definitely enjoy this – two pieces of bread coated in a parmesan and thyme crumb then pan-fried to golden, crunchy perfection and filled with your usual suspects. You could spread on a little tomato sauce with the Dijon, if you like," says Poh Ling Yeow.
