Ingredients
- 1 tbsp Greek yoghurt (or dairy-free alternative)
- 2 tsp vanilla extract
- 250 ml (1 cup) milk
- 50 g (½ cup) rolled oats
- 2 tsp maple syrup
- ½ tsp ground cinnamon
- 1 apple, peeled, cored and diced
- 45 g (⅓ cup) granola or toasted muesli
Instructions
- Mix the yoghurt and vanilla extract in a small bowl until well combined and set aside.
- Combine the milk, oats, maple syrup, cinnamon and apple in a small saucepan over medium heat. Simmer for 8 minutes, stirring regularly until thickened and the apples are just tender.
- Divide the porridge between serving bowls, spoon over the yoghurt mix and top with granola to serve.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
