Ingredients

  • 1 tbsp Greek yoghurt (or dairy-free alternative)
  • 2 tsp vanilla extract
  • 250 ml (1 cup) milk
  • 50 g (½ cup) rolled oats
  • 2 tsp maple syrup
  • ½ tsp ground cinnamon
  • 1 apple, peeled, cored and diced
  • 45 g (⅓ cup) granola or toasted muesli

Instructions

  1. Mix the yoghurt and vanilla extract in a small bowl until well combined and set aside.
  2. Combine the milk, oats, maple syrup, cinnamon and apple in a small saucepan over medium heat. Simmer for 8 minutes, stirring regularly until thickened and the apples are just tender.
  3. Divide the porridge between serving bowls, spoon over the yoghurt mix and top with granola to serve.

Cook's Notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
