Ingredients
- 5 tbsp instant gravy powder
- 1 tbsp tomato sauce
- 150 ml thickened cream
- 1 tbsp dark soy sauce
For the meatloaf
- 1 cup dried breadcrumbs
- 1 kg beef mince
- 1 onion, coarsely grated
- 1 carrot, coarsely grated
- 1 celery stalk, coarsely grated
- ¼ cup finely shredded flat-leaf parsley, plus extra to serve
- 1 tsp salt
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tsp dried thyme
- Black pepper, to season
- 1 egg
Resting time: 30 minutes
Chilling time: overnight
Instructions
- Preheat the oven to 180˚C (fan-forced). Combine the ingredients for the meatloaf in a large bowl and mix well to combine.
- Pack the meatloaf into a non-stick 1.2 litre loaf tin, mounding it up over the top (there will be too much filling to fit into the tin). Cover the top of the meatloaf with a square of baking paper, then wrap tightly with foil. Bake for 90 minutes, or until cooked through, then remove from the oven and allow to stand for 30 minutes. Refrigerate overnight.
- When ready to serve, preheat the oven grill. Line a baking tray with baking paper. Cut the meatloaf into 2 cm slices, then transfer to the prepared tray. Grill for 5 minutes, or until browned and crisp. Alternatively, you can also pan-fry the slices in butter for 1 minute each side for a similar result.
- To make the cream gravy, combine the gravy powder and tomato sauce in a small saucepan. While whisking, gradually add 1 cup cold water, until smooth. Add the cream and dark soy sauce. Bring to a simmer over medium heat, whisking to a thickened gravy consistency. Remove from the heat.
- To serve, divide the meatloaf slices between plates, drizzle with the cream gravy and sprinkle with a little parsley. Serve immediately.
