Ingredients
- 185 ml (¾ cup) canola oil
- 400 g green beans, trimmed and cut into 5-cm pieces
- 100 g pork mince
- 2 garlic cloves, roughly chopped
- 1 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tbsp Chinese olive paste
- pinch of sugar
- 1 tsp cornflour mixed into ¼ cup cold water
Serves 4 as part of a meal
Instructions
- Heat a wok over high heat and add the oil. Fry the green beans in the oil for about 4 minutes or until they appear dry and wrinkled. Remove the beans from the wok with a slotted spoon or tongs, leaving most of the oil in the wok.
- Add the pork mince to the wok and fry until browned and quite dry. Add the garlic and fry until fragrant and lightly browned (if there is not enough oil left in the wok you can add a little more).
- Add the soy sauce, Shaoxing wine and the Chinese olive paste and toss until well combined. Drizzle in a little cornflour mixture and toss to thicken, then transfer to a serving plate and serve immediately.
