Ingredients
- 95 g (1 cup) rolled oats
- 90 g (1 cup) desiccated coconut
- 35 g (½ cup) wheatgerm
- 75 g (½ cup) sesame seeds
- 75 g (½ cup) sunflower seeds
- 75 g (½ cup) pumpkin seeds
- 170 g (1 cup) sultanas
- 125 g butter
- 125 g (½ cup) honey
- 60 g (⅓ cup) brown sugar
Chilling/freezing time: 2 – 3 hrs
Instructions
- Grease and line a 16 cm x 28 cm x 3 cm deep cake tin with baking paper.
- Place the oats, coconut, wheatgerm, sesame seeds, sunflower seeds and pumpkin seeds in frying pan over medium heat and cook, stirring continuously for 8 – 10 minutes or until golden. Transfer to a large bowl to cool, then stir in the sultanas.
- Place the butter, honey and sugar in a saucepan over medium heat and stir for 3 – 4 minutes or until the sugar dissolves. Reduce the heat to low and simmer, without stirring for 7 minutes.
- Add the butter mixture to the dry ingredients and mix well. Spoon into the lined tin and press down firmly, then refrigerate for 2 – 3 hours or until firm. Cut into slices to serve.
