Soy glazed chicken and rice tray bake

This soy glazed chicken tray bake is Priscilla Hon’s favourite choice for entertaining friends at home when she’s busy. Packed with flavour from ginger and garlic, this traybake only takes 10 minutes of hands-on work to prepare, making it perfect for time-poor cooks.

Ingredients

  • 2 tbsp olive oil
  • 4 chicken marylands, skin-on
  • ¼ cup dark soy sauce
  • 2 tbsp light soy
  • 5 garlic cloves, finely grated
  • 3 cm x 2 cm piece ginger, finely grated
  • 1 tbsp toasted sesame oil
  • 2 tsp honey, plus extra to baste
  • Cooked basmati rice, steamed broccolini, thinly sliced spring onion, picked coriander leaves, fried shallots and toasted white sesame seeds, to serve

Instructions

  1. Preheat the oven to 180°C (fan-forced).
  2. Heat the olive oil in a large frying pan over medium-high heat, then pan-fry the chicken marylands on both sides, until golden brown. Line a baking dish with baking paper, then transfer the chicken marylands to the dish.
  3. In a medium bowl, combine the soy sauces, garlic, ginger, sesame oil and honey and mix well to combine. Pour the soy sauce marinade over the chicken marylands in the baking dish and turn to coat.
  4. Roast the chicken for 25-30 minutes, or until golden and cooked through, basting with an extra drizzle of honey halfway through the cooking time.
  5. Serve the soy glazed chicken traybake with basmati rice and steamed broccolini. Sprinkle with the spring onion, coriander leaves, fried shallots and sesame seeds.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
