Two can too late dinner

Comedian Mel Buttle calls this her ‘two can’ too late dinner, as it features two tins of chopped tomatoes and two tins of chickpeas, reducing hands-on prep time. Serve with marinated lamb cutlets for a satisfying and hearty meal.

Ingredients

  • 6 lamb cutlets
  • Extra virgin olive oil, for drizzling
  • 1 small white onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 2 x 400 g cans chickpeas, drained
  • 2 tbsp smoked paprika
  • 2 x 400 g tins chopped tomatoes
  • Salt and black pepper
  • 3 tbsp picked dill tips, roughly chopped
  • ½ cup crumbled feta cheese
For the marinade
  • 3 tbsp extra virgin olive oil
  • 1 ½ tbsp balsamic vinegar
  • 1 rosemary sprig, leaves stripped
  • 1 garlic clove, smashed
  • 1 lemon, finely zested
Resting time: 5 minutes
Marinating time: 10 minutes

Instructions

  1. In a large bowl, combine the ingredients for the marinade. Add the lamb cutlets, turn to coat and allow to marinate while you prepare the other ingredients.
  2. Heat a generous drizzle of olive oil in a large frying pan over medium heat. Add the onion and garlic and cook, stirring occasionally, until softened. Stir through the chickpeas, paprika and tomatoes and cook, stirring, until thickened. Season to taste with salt and black pepper.
  3. While the chickpeas are cooking, heat a chargrill pan or barbecue over medium-high heat. Add the lamb cutlets and cook for 3 minutes per side, or until cooked to your liking. Remove to a clean plate and allow to rest for 5 minutes.
  4. Divide the tomatoey chickpeas between plates and sprinkle with dill and crumbled feta, then top with the grilled lamb cutlets. Serve immediately.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
