Pinoy favourites: La Paz Batchoy

Ang La Paz Batchoy ay isang pagkaing mula Iloilo na gawa sa lamang-loob,  an Iloilo dish typically consisting of innards, egg noodles, sopas at chicharon.
 
Ayon kay SkyCity Adelaide Casino and Albion Hotel Chef Kits Detablan, "I came from Buenavista, Guimaras and, La Paz Batchoy is a favourite soup in our town. I've been cooking it ever since I was 13 years old. It has always been a family favourite."

Ayon kay Kits, mahalagang dahan-dahang pinapakuluan ang sopas sa ibabaw ng mahinang apoy.
 
Mga sangkap


1 kg buto (manok, baka at baboy)
1 kg liempo
1/2 kg atay ng baboy
1/2 kg dry egg noodles
1 karot
1 sibuyas
1 buong buwang, inihaw
5 tbsp toy
Patis, to taste
Asin
Paminta
3 pinakuluang itlog
Chicharon
Garlic-chili oil

Paraan ng pagluluto

1. Ilagay ang buto, liempo, atay, buwang, toyo, patis, sibuyas, karot, asin at paminta sa isang kaserola.
2. Lagyan ng sapat na tubig.
3. Takpan at pakuluan ng apat na oras.
4. Tanggalin ang liempo at atay. Pakuluan ang sopas.
5. Prituhin ang liempo.
6. I-slice and liempo at atay.
7. Maglagay ng egg noodles sa isang bowl. Ilagay ang ibang sangkap sa ibabaw ng egg noodles.
8. Lagyan ng sopas at spring onion at garlic-chili oil.
