The only Relais Desserts Patisserie in the southern hemisphere, La Renaissance Patisserie was founded in 1974 by Pierre and Sally Charkos. It was one of the first to bring the art of French pastry to Australia. Jean-Michel Raynaud, a renowned pastry chef, is now co-owner with Sally Charkos. He wrote a book in 2015, The French Baker, and tells us about his pastry chef experience in Australia with funny stories.
