Chicken with smoked paprika
Ingredients
4 chicken thigh fillets
3 cloves garlic, crushed
Juice of a lemon
3 tsp hot smoked paprika
2 tbs extra virgin olive oil
Parsley for garnish
Method
- Add the chicken and the remaining ingredients in a bowl, season and mix well. Cover and refrigerate until needed – overnight is good.
- Heat oven to 180C. Place marinated chicken in a baking dish, drizzle with a little olive oil, add ½ cup water and bake for 45 mins or until cooked and easily falling apart.
- Remove and rest for 10mins before cutting into slices. Sprinkle with chopped parsley and serve

- You can use other cuts of chicken like drumsticks, wings and breast.
- Works well on the BBQ.
- Can be served on a bed of lettuce or rice.
Accompaniments: Green salad of your choice, steamed broccoli, mushroom pilaf, Greek salad
