Ingredients
12 mushrooms
1 sprig fresh thyme
2 chorizo sausages
¼ cup sherry vinegar (or red wine vinegar)
1 tbs honey
½ cup fresh breadcrumbs
1tbs chopped parsley
Extra virgin olive oil
Method
How to prepare the chorizo:
- Heat oven to 180C
- Cut chorizo into slices and then dice. Heat a fry pan and add the chorizo sausage. Fry until the sausage is golden and pour out the excess fat
- Add the vinegar and honey
- Simmer until juices are sticky. Remove from heat
How to prepare the mushrooms:
- Remove stalks from mushrooms and place on a baking tray, lined with baking paper
- Drizzle with olive oil and sprinkle with thyme leaves
- Bake for 20mins or until they just begin to soften
- Mix breadcrumbs with parsley and drizzle with olive oil until just coated, season with salt and pepper
- Remove mushrooms form the oven and spoon chorizo mixture in each and sprinkle with the breadcrumb mixture
- Grill or bake in a hot oven (200C) for a further 5 mins or until crumbs are toasted
