Butter beans in tomato sauce (gigantes)

Baked butter beans in a rich tomato sauce is one of the most popular, traditional Greek dishes. Vegan and full of goodness, it can be enjoyed all year round. Follow Angela Nicolettou's recipe for a delicious meal.


Gigandes- baked butter beans

Ingredients

500g dried butter or lima beans or 3 x 400g cans butter beans

2 red onions, sliced

1 can of tomatoes, diced

1 cup parsley leaves and the stalks retained

1 cup extra virgin olive oil
Method

Bring lima beans to a boil in plenty of water and then take off the heat and rest for an hour. Change the water and simmer for about 30 minutes until the beans are just cooked. Drain. Be careful not to overcook the beans, as they will become very mushy.

Heat the oven to 1800 C.

In a baking dish add the olive oil and the sliced onions and mix. Bake in the oven until the onions begin to soften.

Remove baking dish from the oven and add the cooked beans (or drained and rinsed butter beans), the tomato, chopped parsley stalks and season with salt and pepper. Mix and return to the oven, baking for about 30 minutes, and stirring occasionally. Finally, mix through the parsley leaves and let rest for a few minutes before serving.

Serve warm or cold – great the next day!
