Dakos
Ingredients
Cretan barley rusks
Ripe tomatoes
Pinch of sugar
Feta cheese
Extra virgin olive oil
Capers
Dried oregano
Method
Sprinkle the husks with a little water.
Cut each tomato in half and grate on a coarse grater. Add a pinch of sugar and season with salt and pepper and mix.
Add a layer of tomato mixture to the rusk, crumble with feta cheese and scatter with a few capers.
Sprinkle the top with oregano and drizzle with olive oil. Season with pepper and serve.
