Yoghurt flatbread
Ingredients
250g bread (pizza or baker’s) flour
250g Greek plain yoghurt
2 tsp baking powder
1 tsp salt
2 tbs extra virgin olive oil
Method
- Place flour, salt and baking powder in a bowl, make a well in the center and add the olive oil and yoghurt. Knead until a soft dough is formed.
- Cut the dough into 6 pieces and roll into balls. Using your hands flatten each into the shape of a disk and roll out with a rolling pin to ½ cm thickness. Lightly brush each side of the flatbread with olive oil.
- To cook, heat a grill or BBQ or frying pan and cook for a couple of minutes on each side (or until golden). Keep warm in a tea towel.
