Ingredients:
Glutinous rice:
- 1/2 kg glutinous rice, soak for 30 minutes
- 300 ml coconut milk
- 1/2 tsp salt
- Lemongrass (as needed)
Chicken filling:
- Breast chicken fillets
- 1 onion
- 3 cloves garlic
- 5 candle nuts
- 1 tsp white pepper powder
- 1 tbs salt
- 1 tbs coriander powder
- Cocount milk (as needed)
- Kaffir lime leaves (as needed)
- White sugar (as needed)
Instruction:
Steam the glutinous rice (that has been soaked) until it gets sticky.
In a separate pan, put coconut milk, salt and lemongrass. Bring it to boil then turn off the heat.
Pour it into the sticky glutinous rice, then stir until all mixed. Let it cool down, then put it back on steam and steam until all cooked.
For the chicken filling, sauté onion, garlic and candle nuts until turning yellow. Then put them into the food processor, puree them.
Put the chicken and the pureed spices in the pan. Add white pepper ground, salt, coriander powder, coconut milk and kaffir lime leaves. Bring it to boil. Turn down the heat and cook the chicken until it's tender. Cut the chicken into floss-like pieces and keep cooking it until the coconut milk subsided. Add the sugar as needed then cool it down.
Fill the glutinous rice with the chicken, and roll it as you like.
