Gaudu has competed in three of the last four Tours and will lead the squad for the very first time after veteran Thibaut Pinot was ruled out due to injury.
The 24-year-old has achieved top 10 finishes across Liege-Bastogne-Liege, Tour of the Basque Country and Criterium du Dauphine this season, and told Cyclingnews he was "ruling nothing out" for the GC.
Demare, meanwhile, will return to the Tour de France for the first time since 2018, having spent the past two seasons as part of Groupama-FDJ's Giro d'Italia team.
The 29-year-old won five stages during his time in Italy - including the points jersey in 2020 - and will have his eye on the green jersey in France.
With seven wins to his name this year, the sprinter's hopes of another will hinge on defeating the likes of Caleb Ewan (Lotto Soudal), Sam Bennett (Deceuninck-QuickStep) and Peter Sagan (Bora-Hansgrohe).
Demare's pilot, Jacopo Guarnieri, also made the squad, alongside time trial specialists Ignatas Konovalovas, Miles Scotson and Stefan Kung, as well as climber Valentin Madouas and debutant Bruno Armirail.
