Fava Dip
Ingredients
2 cups yellow split peas
1 medium onion, diced
¼ cup extra virgin olive oil
Diced red onion and chopped parsley to serve
Method
- In a large saucepan add the yellow split peas with 2 litres cold water and simmer
- Skim off any froth during this time
- Add the onion and olive oil and continue to cook until the peas are very soft and begin to thicken. Season to taste.
- Puree using a stick blender or mix vigorously with a wooden spoon.
Tips: Serve warm or at room temperature with a sprinkle of diced red onion and chopped parsley and a drizzle of extra virgin olive oil.
