Lazy cheese pie without a filo pastry is suggested for today by chef Giannis Kakolyris.
Ingredients
500gr yoghurt
300gr feta
4 eggs
200gr flour
150gr olive oil
50gr baking powder
Half a bunch of mint
Pepper
Sesame seeds (for whoever likes them)
Instructions
1. In a bowl we will break our eggs and beat them as we make an omelette.
2. Add half of the olive oil and mix it with the eggs.
3. Repeat the same with the yogurt and add it to the eggs and oil, stirring to combine everything together.
4. Add the pepper and baking powder and continue to mix.
5. Once all of your ingredients are combined, use your hands to break the feta cheese into large chunks into the eggs.
5. Set aside the bowl of feta and your eggs and continue by washing and chopping the fresh mint.
6. After chopping it, add it into the eggs as well. Mix together, you should have a creamy result.
7. Start adding your flour slowly and mix. It will give us a more compact and firm dough.
8. Once you have added the flour, take a baking pan and brush the entire surface with a little olive oil
9. Fill the pan with your mix and spread it evenly over the entire surface.
10. For anyone who likes it, you can add sesame seeds on top of your cheese pie.
11. Bake it at 180 degrees for 30 minutes.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
