Pagdiwang sa alaala ni Mama: Mother's Day Merienda at recipe ng Royal Bibingka

Para sa Mother's Day nitong taon, plano ni Grace Guinto na ipagdiwang si "[Mama] even when she's not present in person".

Pagkatapos yumao ang ina niyang si Corazon limang taon ng nakalipas, laging nakakaramdam ng lungkot si Grace Guinto ng 'Sweet Cora' kapag papalapit na ang Mother's Day.

"There’s always a level of anxiety of how are we going to spend it. She’s not around. Do we spend it with our aunties? Do we spend it with our family unit on our own?" saad niya.

Ngunit, iba nitong taon. Nitong Mother's Day, plano ni Grace na ipagdiwang ang kanyang "[mama] even when she's not present in person" habang siya's nasa isang "moment of happiness that will allow me to feel a level of fulfillment again."

Kasama ng ni Kristina Náray, magtatanghal si Grace ng isang  sa South Melbourne Market sa Mayo 12. May six courses ng mga paboritiong Pilipino meryenda ang pop-up dining event na ito.

"I’m obviously more of a sweet connoisseur and that really is the catalyst of why 'Sweet Cora' [and 'Sweet Cora pop-up' at the Footscray Finds] came to be - a legacy of my mother, but also a homage to my love of sweets. No meal is complete without having sweets as part of it," saad ni Grace.

Plano ni Grace na ihanda ang kanyang reinvented turon cake, pangalawang course na may cassava, at pangatlong course na may ube dahil "nothing can say 'Filipino dessert 'like that vibrant purple colour."

Mga sangkap

3 itlog
3/4 tasang asukal
2 tasang all-purpose flour
4 kutsaritang baking powder
1 1/4 tasang kakang gata
1/2 tasang grated cheese
Dahon ng saging, pinalanta
Tinunaw na matikilya
Ginayat na niyog
Itlog na maalat

Paraan ng pagluluto
 
1. Mag-bati ng itlog at, idagdag ang asukal ng dahan-dahan.
 
2. Paghaluin ang harina at baking powder. 
 
3. Haluin ang mga tuyong sangkap at kakang gata.
 
4. Ibuhos ang batter sa 20” greased layer cake pans na may dahon ng saging.
 
5. I-bake sa 180 degrees Celsius ng 10 minuto.
 
6. Tanggalin at lagyan ng keso. I-bake muli ng 20 pang minuto.
 
7. I-brush ng dalawang beses ng mantikilya at patuloy na i-bake.
 
8. Kapag naluto na ang bibingka, i-brush uli ito ng mantikilya at lagyan ng asukal.
 
9. Ihain ng may kasamang ginayat na niyog at itlog na maalat.
