Tofu patty: Colonial heritage food with a twist

Perkedel - which is a 'legacy' food of the Dutch era - does not have to be merely using meat. This one is an example :)

Ingredients:

  • 1 pcs white tofu (original/firm), cut into 12 pieces
  • 200 gr grated young coconut
  • 1 egg
  • 1 tbs cornstarch
  • 1 tbs wheat flour (or more if you want the patty to be firmer)
  • 300 ml oil to fry
Spices:

  • 3 garlics
  • 4 shallots
  • 1 tbs coriander powder
  • Salt (to taste)
  • 1 tsp chicken stock powder
Instructions:

Grind all the spices needed.

Puree the tofu (can be done with a squeeze). Mix it with the grated coconut.

Add the ground spices, egg, cornstarch, and flour. Stir well.

Form the dough using 2 spoons, or make it into a meatball-like shape with your hands. Finish all the dough.

Heat the oil in the frypan, then fry the doughs until all browned and cooked.

Drain, and serve them with 'sayur lodeh' or your other favorite dishes...😉
